Hand-picked at peak ripeness, the cherries are depulped immediately and fermented with their mucilage for 24 to 36 hours before being washed and dried in open patios at a controlled temperature of 40°C, utilizing a two-phase shade drying over approximately five days . This meticulous process preserves the coffee's complex notes, resulting in a clean, structured cup with flavors of raspberry, orange blossom, and caramel . Crafted by a fourth-generation producer known for innovation and precision, it’s a standout expression of Colombian terroir.
